Biography:

Paul is Executive Chef/Owner of Cook Restaurants in Newton and Needham is known for his “approachable” and locally sourced food. He previously owned several successful restaurants including Tryst, Spitfires BBQ, and Olio. Over the past 20 plus years Paul has been featured multiple times with both Cook and Tryst on Chronicle, Phantom Gourmet, Dining Playbook, TV Diner, and in the Boston Globe, Boston Magazine, the Boston Herald as well as numerous other publications and news outlets. Olio was listed in the Zagat Black Top 100 restaurants in the Nation and listed as one of Boston’s Best Suburban Restaurants in Boston Magazine. Before owning his first restaurant, Paul was the executive chef of a New England inn and of a large catering company in Boston. While there, he was hired as the executive chef for Tanglewood in the Berkshires, overseeing all food and beverage operations. Paul has provided invaluable insight, advice and direction in the planning stages of all food service aspects of both the arena and the academy, and he will serve as the director of the arena restaurant and concessions business.
